Bihari Chota Ghoshth Biryani


Ajza,e

Chawal 2kg
Chota Ghosht 1 and half kg
Dahi 2 cup
Garam masala Sabith 1/2 cup
Shan Bombay Biryani Masala 1 packet Chota (65gm)
Ghoshth Masala 1 khane ki chamach
Tamater 5 adad
Pyaaz 5 adad
lehsan 1/2 gotly
Adrak 1pc 2 1nch sq baraber
Dhania 1 muti baraber
Zeera 1/2 cup
Zarde ka Rang (color lemon yellow) 1 Chai ki Chamach
Desi Ghee
Mirchi Hasbe Bardashth

Tharkeeb Ghoshth

Pehle Ghoshth ko aag pe rakein.
Thora pani kam hone ke baad Pyaaz (bareek kata huwa) Adrak aor Lehsan (goonta huwa) dalen aor Pani Khatham hone dein.
Ghee ya Thail (cooking oil) dalen aor Paani ko poori tharah khatham hone dein.
Ab Ghoshth Masala milain aor khoob chamach hilain thake chepak na jai.
Masala milne ke baad Tamatar (bareek kata huwa) dalein aor chamach hilathe rahein.
Namak Handi ke barabar milain aor Tamatar ko hal hone dein.
Tamatar ka khatham hone ke baad ghee ya thail (cooking oil) ooper ane lage ga tho ghoshth tayar hogaya.

Tharkeeb Chawal,
Pehle Chawal saaf karke 15 minut thak bigoyen
1 adad Pyaaz bareek katein aor Desi Ghee main talein zard hone baad nikalein.
Ab usi Ghee main Garam masala dalein aor hilayen Khushboo ane ke baad Dahi (pathla kiya huwa) Dalein aor chamach hilayen.
zard hone par Chawal dalein aor (ithna Paani dalein ke Chawal khatham karsake) phir Shan Masala aor Namak (Chawal baraber) milain aor khoob chamach hilayein.
Paani obalne phar masala ooper atha hai (khayal rahe zyada chamach hilane se Chawal kichri na bane) Paani khatham hone ke baad bahar nikale. Ghosht aor Chawal ko milain ooper se Zarde ka rang dalein oske ooper tala huwa Paaz uske ooper kata huwa Dhania dalei aor aag par rakein. 5 minut baad aag Halki Aanch par rake aor sar dampen beech main koi kapra ya Akhbar rake kam az kam 30 minut thak dam dein.
Ab Bismillah parkar Bihari Biyani ka maza lein aor Hamein Dua main yaad rakhen.
